Spring Honey is a pleasant-tasting mild honey. It is water white to lemon-yellow in color and very aromatic. Spring honey is made mainly from the nectar of the black locust trees. This honey is tough to get as the trees are only in flower a few weeks in early Spring and the nectar flow is early and sporadic.
